Baking Trials

So I was a good mom today! Yeah me! The hubs and I made sugar cookies for the boys to decorate today! I knew I would freak out if they were decorating them and I was around. You know that perfectionist in me would want to "show" them how to do it and then end up taking over the whole project! Well I didn't! I'm so proud of myself!

Instead Keith made the dough, I cut them out, and we threw them in the oven, let them cool and then I made the icing. Even had Dan help me color the icing. I handed him the spoon, told him not to make a mess, to be careful because it was a little runny and then I walked away. WOW! They are colorful that is for sure!

My first attempt at making candy cane peppermint sugar cookies was not so good! The red dough was too wet so they kept falling apart trying to twist and form them. So they don't look too pretty but they sure do taste good!





 So above is what we did with them when I couldn't get them to work out right. They taste good at least! They just don't look real pretty! Oh well.

So then I was supposed to make our Lemon Kiss Cookies. Well I was helping the baby brush his teeth. We are working with him on not picking up his step stool and to actually push it. Yeah, no, that didn't work. He picked it up and dropped it on the bridge of my foot! Sadly I cursed, not at him, just in general. What did he do, looked at me and went right back to putting his stool in place! Stinker. Of course it was on my right foot which is by far my worst RSD foot! So needless to say I'm sitting on the couch for the most part with my foot up. I did make the dough for the Lemon Kiss Cookies and that is now chilling in the fridge. And I am attempting to make dinner. Slowly and step by step taking lots of breaks. Thankfully a dear friend of mine is on her way to help me with the kids, I'll pay her in cookies and dinner.

Enchilada style burritos. A family recipe my mother has been making for as long as I can remember. Now my sister and I make our own versions of these. Mine, large flour tortillas, refried beans, seasoned hamburger, onion, cheese, and green olives. Wrap them up burrito style, cover with enchilada sauce and more cheese and onions and olives and then bake on 375 for 10 minutes or until cheese is melted and bubbly! I serve it with sour cream and during the summer guacamole also. But seeing as I can't get decent, cheap avacados right now, yeah no guacamole tonight. Hopefully I'll get to the rest of the cookies tonight, if not then that is tomorrow and they should be good and chilled by then!
